Your day.
As a Sous Chef, you need to know how to:
Assist in the daily operations for food preparation and food service operations to ensure associates have appropriate equipment, inventory and resources to perform their jobs and meet goals and deadlines. May include arranging for and covering staffing needs. Perform manager/supervisor duties as assigned.
Assist in the preparation, portioning, garnishing, presentation and safe storage of food.
Utilize Food Management Systems to track food consumption in order to purchase the appropriate amount of ingredients for preparation and provide recipe standards for each meal.
Ensure that kitchen, equipment and storage facilities are sanitary, neat and organized.
Probe potential problems and apprise manager of status on resolution of problems or issues, using appropriate resources when necessary.
Lead by providing positive and constructive feedback to employees in order to reward, coach, correct and motivate.
Ensure compliance with all federal, state and local regulations as well as department policies and procedures (e.g. quality assurance, safety, operations, personnel).
Establish a safe work environment for employees by providing safety-related training and equipment maintenance.
Ensure department compliance with all food safety standards and Hazardous Analysis of Critical Control Point (HACCP) guidelines.
Establish operating standards, implement quality improvements and communicate them to employees.
Your experience.

Current ServSaf certification, required within three (3) months of hire
Demonstrated culinary ability, required
Working knowledge of professional food safety, required
High School Diploma or equivalent, preferred
Associateâ™s Degree from an accredited culinary school, preferred
At least four (4) years of high-volume cooking, preferred
At least two (2) years in a culinary leadership role, preferred
